Power-Packed Chicken & Veggie Stir-Fry
Ingredients:
1 chicken breast (about 200g), cut into strips
1 tablespoon olive oil
1 bell pepper, sliced
1 small zucchini, sliced
1/2 onion, thinly sliced
1 clove garlic, minced
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon ginger (fresh or ground)
Salt and pepper to taste
Optional: A sprinkle of sesame seeds or chili flakes for extra flavor
Instructions:
Cook the chicken: Heat the olive oil in a large pan over medium-high heat. Add the chicken strips and cook until browned and fully cooked, about 5-7 minutes. Season with salt and pepper.
Stir-fry the veggies: In the same pan, add the garlic, bell pepper, zucchini, and onion. Stir-fry for 4-5 minutes until the veggies are tender but still crisp.
Add flavor: Stir in the soy sauce and ginger. Cook for another 1-2 minutes, allowing the sauce to coat the chicken and veggies.
Serve: Optionally, sprinkle with sesame seeds or chili flakes for extra flavor. Serve warm!
