Power-Packed Chicken & Veggie Stir-Fry

Ingredients:

  • 1 chicken breast (about 200g), cut into strips

  • 1 tablespoon olive oil

  • 1 bell pepper, sliced

  • 1 small zucchini, sliced

  • 1/2 onion, thinly sliced

  • 1 clove garlic, minced

  • 1 tablespoon soy sauce (or tamari for gluten-free)

  • 1 teaspoon ginger (fresh or ground)

  • Salt and pepper to taste

  • Optional: A sprinkle of sesame seeds or chili flakes for extra flavor

Instructions:

  1. Cook the chicken: Heat the olive oil in a large pan over medium-high heat. Add the chicken strips and cook until browned and fully cooked, about 5-7 minutes. Season with salt and pepper.

  2. Stir-fry the veggies: In the same pan, add the garlic, bell pepper, zucchini, and onion. Stir-fry for 4-5 minutes until the veggies are tender but still crisp.

  3. Add flavor: Stir in the soy sauce and ginger. Cook for another 1-2 minutes, allowing the sauce to coat the chicken and veggies.

  4. Serve: Optionally, sprinkle with sesame seeds or chili flakes for extra flavor. Serve warm!
